I’m writing this post with a view of the New York City skyline. I’ve been in the city finalizing my apartment and signing the lease. I travelled here with Ben, his brother and his brother’s fiancée (who are getting married in four days…!). It has been a busy weekend, filled with lots of walking, reuniting with friends and family, and eating delicious food. This city has so much culinary inspiration! I am looking forward to discovering new restaurants and recipes when I move here.

Ben’s brother and his fiancée are getting married this weekend, my sister finished up an exciting summer internship and was already offered another internship next summer, and I am moving to New York in two weeks to start graduate school! It is happy times like these that call for celebrations, and what better way is there to celebrate than with a sweet dessert?
I made this blueberry peach crisp on the Vineyard about a week ago. It is perfect for a summer celebration, be it a birthday, an engagement, or simply for a gathering of friends and family. It is easy to prepare, and can be made the night before and refrigerated until ready to be baked. The blend of flavors is delectable – sweet, fruity, and a little tart. Give this recipe a try while peaches and blueberries are still in season and on sale at the market!

August Blueberry and Peach Crisp
(serves 6-8)
For the fruit layer:
5 large ripe peaches, peeled and sliced thin
2 pints blueberries, washed and dried thoroughly
2 ½ tbsp coconut sugar (or sugar)
3 tbsp corn starch
For the crisp:
1 ¼ cup old fashioned rolled oats
¾ cup oat flour (or flour of choice)*
½ tsp cinnamon
¼ tsp salt
3 tbsp coconut sugar (or brown sugar)
5 tbsp coconut oil (not melted)
1. Preheat oven to 350 degrees F.
2. Lightly spray a glass 9”x13” baking dish with oil or cooking spray.
3. Combine peach slices, blueberries, 2 ½ tbsp. coconut sugar, and 3 tbsp corn starch in baking dish and mix together with hands.
4. Combine all crisp ingredients except coconut oil in large mixing bowl. Once combined, add coconut oil and mash into oat mixture with a fork until the mixture resembles large crumbs.
5. Spread crisp topping over fruit evenly.
6. Bake for 30-45 minutes, until fruit is bubbling on edges and topping is slightly browned and crispy.
Best served to family and friends with a big scoop of your favorite vanilla ice cream.
