When I go to sleep at night, I'm excited to wake up in the morning because it means I get to eat breakfast. Anyone feel me? On most days, I'm thinking about food all the time, and counting down the minutes until it is acceptable for me to have my next meal. I know I'm not the only one that feels this way. I just love to eat, which is why I try to make every meal memorable and delicious. I'm not a big fan of grab-and-go meals that consist of a protein bar and piece of fruit. I'm a fast eater in general, and with this type of meal I am finished in 2 minutes and my body doesn't even know what just happened. So, when I have the time, I love to prepare a sit down meal to eat to enjoy. When I know I won't have the time (like rushing out the door for a 9am class) I've gotten pretty good at meal prepping the night before to ensure I can have a satisfying but quick meal to start my day. Overnight oats and chia pudding are great for this type of day.
This summer, I've been all about smoothie bowls for breakfast. In the winter, I have a hot bowl of oatmeal almost every morning, but I crave something cooler in the warmer months. I do have a go-to smoothie recipe, which I will post soon, but today I felt like celebrating peach season with a creamy, pale pink peach pie smoothie bowl. Everything about this smoothie bowl screams summer. It's frosty and smooth and just sweet enough. The color reminds me of the sky right before sunset in August. I topped mine with blueberries, chia seeds and black figs. Top with whatever suits your taste buds, though. Sliced banana, strawberries and clustery granola would be amazing.
I used a mixture of frozen fruit (banana) and fresh (peaches). Frozen fruit gives smoothies a thick, frosty texture, but fresh fruit is more flavorful, so it is ideal to use a combination of both. I bought a package of Saturn peaches at Trader Joe's which are smaller than normal peaches, so I used one and a half. How cute are they?

Dreamy Peach Pie Smoothie Bowl
(serves 1)
Ingredients:
3/4 cup almond milk (or non-dairy milk of choice)
1 tbsp almond butter
1 tbsp unsweetened shredded coconut
1 ripe peach, de-pitted and sliced
1-2 pitted dates or 1 tbsp maple syrup (optional, if you want it sweeter. I did not add this).
3/4 tsp vanilla extract
1/2 tsp cinnamon
1 banana, frozen
Toppings of choice (berries, figs, nuts and seeds, granola, etc.)
1. Add ingredients to blender in the order listed (besides your toppings), and blend on high until smooth and frosty.
2. Pour into bowl, add toppings, and enjoy with a spoon.
